Healthy Cornish Blue Cheese Caramelised Apple Watercress Salad
2 eating apples – peeled, cored and cut into quarters
1 teaspoon lemon juice
1 tablespoon water
50g dark brown soft sugar
100g Cornish blue cheese
2 tablespoon walnuts pieces
1 brunch of fresh watercress
1 tablespoon olive oil
1 tablespoon balsamic vinegar
Salt and pepper
- In a large frying pan melt butter over medium heat; add apples. Cook, stirring constantly, until apples are almost tender Add in brown sugar, water and lemon juice.Bring to the boil. Allow to bubble for 2 minutes., till the sugar is caramelised. Leave to cool slightly.
- Arrange the watercress on 2 large plates. Arrange the caramelised apple on the watercress. Crumble Cornish blue cheese over the apples. Sprinkle with walnuts.
- To make the dressing: Mix olive oil and balsamic vinegar together. Season with salt and pepper. Drizzle the dressing over the salad. Serve with crusty bread as a starter or a light lunch.
